News Americas, NEW YORK, NY, Fri. Sept.15, 2017: One of my favorite spice is Ginger.

I love it for its versatility and its flavor.  In the Caribbean and it’s Diaspora ginger is often used to make a favorite beverage called Ginger beer, and is put in the popular Caribbean drink  sorrel.

Ginger is also used in cooking meats and baking cakes and cookies.  Today I will share with you the recipe for Gingerbread one of my favorite desserts – Gingerbread.

Ingredients

2 1/2 Cups Flour

1 cup brown sugar

1 cup boiling water

1 cup molasses

1/4 cup melted butter

2 eggs

3 teaspoons grounded ginger

1 teaspoon mixed spice

1 teaspoon cinnamon

1 teaspoon baking soda

Method

Cream eggs and sugar.

Add melted butter, then molasses.

Combine flour, baking soda, cinnamon, mixed spice and ginger and add to the mixture.

Add boiling water.

Combine all ingredients thoroughly.

Pour in loaf pan and bake in the oven at 350 degrees for one hour.

After 45 mins test with a knife. When done knife should come out clean.
