News Americas, NEW YORK, NY, Fri. Jan. 10, 2020: Over the holidays, a friend of ours served Ducana, an Antiguan delicacy. It was delicious so we wanted to share it with you this week. Here’s how you make it.

2 cups grated sweet potato

2 cups grated pumpkin (optional)

1 ½ cup flour

Brown sugar to taste

Milk or water to mix

Sterilized banana leaves and strips of banana stem

½ tsp. grated nutmeg

Sift flour, salt and spices in a bowl.

Add potato, coconut and pumpkin and mix well.

Add sugar.

Mix to a very thick batter with milk or water.

Drop batter into squares of banana leaves.

Fold securely.

Tie with strips of banana stem.

Cook in rapidly boiling water until firm.
