News Americas, NEW YORK, NY, Fri. June 30, 2017: One of my favorite Caribbean meat less meal is calaloo and cod fish served with green banana and flour/ corn meal  dumplings and paired with avocado .

This is also a very easy dish to make and it is rich in vitamins, iron and fiber.

The recipe for this delicious meal is as follows:

INGREDIENTS

2 bunches of freshly picked and cleaned Calaloo

1/2lb Saltfish (cooked and flaked)

2 large onions (minced)

2 cloves of Garlic

2 large tomatoes

1 sprig of thyme

1/2 tsp Scotch Bonnet Pepper

1/4 cup coconut oil

6 fingers Green Banana, peeled

1/2 lb flour

1/4 corn meal

METHOD

In a Dutch pot Sauté seasonings and add calaloo and Saltfish and allow to steam until cooked.

In another large Dutch pot add tap water more than half way up and bring to a boil.

Add peeled green bananas.

Knead flour and cornmeal in a bowl and make into small round balls and then flatten in your palm and add to the same pot.

Add salt to taste.

Boil until both are cooked through.

Serve with Calaloo and Saltfish and avocado.
