Jerk Sweet Potatoes

INGREDIENTS

3 large, sweet potatoes, peeled and diced into 1-inch cubes

For Jerk Seasoning

1 tablespoon allspice

¼ teaspoon ground cinnamon

¼ cup light brown sugar

1 teaspoon red pepper flakes

¼ teaspoon ground cloves

¼ teaspoon ground cumin

2 teaspoons salt

1 teaspoon freshly ground black pepper

½ cup butter, softened

METHOD

1. Mix all of the jerk seasoning ingredients and reserve.

Preheat a toaster oven to 375° F.

Toss the sweet potatoes in the seasoning mixture and place in a roasting pan.

Roast for 20 minutes until tender, turning the potatoes every 8 minutes to ensure even cooking and that they caramelize evenly.

Garnish with cilantro or parsley and serve.

*If working with a smaller toaster oven, cut the recipe in half.
